Pumpkin Seed Spread
Ingredients:
1 cup of pumpkin seeds
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon dried dill
1/4 teaspoon ground cardamom
1/4 teaspoon dried culinary mint
Preparation:
Soak pumpkin seeds in water for 4 hours.* This softens them and creates a creamy texture.
Place soaked pumpkin seeds, olive oil, 5 tablespoons of water, and herbs into a blender or food processor. Blend or process until you have a smooth and consistent, creamy spread.
Transfer to a bowl for serving. May be made ahead of time and stored in the refrigerator. Serve chilled or at room temperature with crackers, bread, or cut vegetables.
Store any unused portion in the fridge for up to three days.
*to speed up this process in a pinch, soak for 1 hour with very hot water.
